“Skinny Soup” Recipe

In my years (and years!) of dieting, I have found one thing that helped me to get off to a great start. Not only does it help to fulfill the vegetable requirements on most diet regimes, but it tastes good and helps when you get a craving to eat something. Following is my recipe for what I call Skinny Soup. I can’t remember where I got it from, a magazine or maybe even Weight Watchers years ago. My daughter makes it occasionally when she is trying to lose a few pounds, and she really likes it. You can change up the veggies depending on what you like, just make sure they are low carb types. I have added on to the recipe as the years have passed so I hope you enjoy it.
Skinny Soup
1 head of cabbage, chopped
1 cup chopped zucchini/italian squash or yellow squash or a mixture
1 yellow onion, chopped
3 or 4 stalks of celery, chopped
1 cup carrots, chopped
1 can stewed tomatos
1 pkg frozen corn (optional, ads some sweetness)
4 cups V-8 vegetable juice (or tomatoe juice if you like it plain) Low Sodium is best healthwise
1 cup water
1 medium potato, chopped
a couple of sprigs fresh basil (or 1 tsp dried)
Salt and Pepper to taste
You can add fresh herbs according to your preferences, I like rosemary and thyme.
Dump all ingredients into a large pot and bring to a boil, reduce heat to medium and cook until potatos and carrots are tender. Simmer for 15 minutes, cool and enjoy!
This makes quite alot of soup. You can put it in ziplock freezer bags and freeze what you don’t eat. You can eat as much as you like with no guilt, and it takes the edge off the hungries while you are getting accustomed to your new diet plan.

I actually grow a lot of those vegetables too. I also grow my own Thyme and Rosemary and I am always looking for recipes.

I used to grow Lemon Thyme and it was an awesome flavor for this soup, but I can’t find it in stores and don’t grow it anymore. Rainer also suggested adding tofu, if that’s something you like, try it! this soup is very versitile and can be made to anyone’s preferences. Bon appetite!
Oooohhh I’ve made this one before. Thanks for reminding me of this one. It’s great in the crock pot and this is excellent soup weather.
